Ingredients:
1 pkg. beef stew meat
1 yellow bell pepper
1 vine ripe tomato
1 tsp. chilli powder
1 tsp. garlic powder
salt
ground black pepper
2 tbsp soy sauce
8 wooden skewers
Directions:
*Preheat oven to 300 degrees F.
*In a large bowl put the wooden skewers
and cover with warm water.Let sit until soaked.
*Chop the bell pepper into 2 inch pieces and set aside
*Cut off the ends and chop tomato into sections and set aside.
*Rinse the stew meat and set aside.
*Assemble the skewers as follows:Meat,Pepper,Meat,Tomato onto all 8 skewers.
*Season with salt ,pepper,garlic powder,chili powder,drizzle with the soy sauce.
*Place on baaking sheet in a preheated 300 degree oven for 15 minutes.

Paula,s Old Fashioned Meatloaf
Ingredients:
2 lb. ground beef
1/2 lb. bread crumbs (may use crackers)
1 cup milk
1 lg egg
1 med. onion, chopped
1 sm. green bell pepper, chopped
1/2 tsp. ground dry mustard
1/4 tsp ground sage
1/8 tsp garlic powder
1 tbsp. worcestershire sauce
3 strips uncooked bacon
1/2 cup barbecue sauce (set aside)
Directions:
Preheat oven to 350 degrees F.
In a large bowl combine all the ingredients in order listed except for the bacon and barbecue sauce.
Spray 13 x 9 x 2 inch baking dish with nonstick cooking spray.
Turn the meatloaf mixture out into the baking dish.Pat the mixture into the shape of a rectangle.
Place the 3 bacon strips long ways on the meatloaf.
Cover the meatloaf with aluminum foil .
Place in the oven and bake for 45 minutes.
Remove meatloaf from oven and uncover.
Take the barbecue sauce and spread over top of the meatloaf,place back in oven for 10 minutes more....
makes 6 servings

Pineapple Baked Chicken
Ingredients:
*8 bone in chicken leg quarters
*1 can (15 oz.)pineapple slices in juice
*salt & pepper to taste
*1 medium onion,chopped
*sunflower oil
Directions:
*Preheat oven to 375 degrees .
*In (2) 13 x 9 x 2 inch baking dish drizzle a little sunflower oil.
*Add the chicken leg quarters in a single layer.(Do not overlap).
*Season with salt and ground black pepper to taste.
*Add sliced pineapples,and chopped onion.
*The juice from the pineapples pour over the chicken.
*Bake in 375 degrees F. for 45 minutes.

Citrus Beef Ribs
Ingredients
1/2 cup apple cider vinegar
5 lbs beef ribs,bone in
1 lime ,sliced
1 navel orange,sliced
1 tsp. turmeric
1 tsp corriander
salt & pepper to taste
Directions:
*Preheat oven to 350 degrees F.
*In a 13 x 9 inch glass baking dish drizzle a small amount of sunflower oil .This will help to keep the ribs from sticking to the pan and flavor them as well.
*Arrange the ribs in a single layer in the baking dish.
*Add the turmeric,corriander ,salt and pepper.
*Take and slice the orange and the lime into thin slices place on top of the ribs and around the sides of dish.
*Pour the 1/2 cup of apple cider vinegar over top of citrus and ribs.
*Cover with aluminum foil .
*Bake in 350 degree oven for 1 1/2 hours or until tender.

1/2 onion,finely chopped
1 clove garlic,crushed
1 tsp.ground turmeric
*4 chicken breasts
salt to taste(optional)
freshly ground black pepper
1/2 c. chicken broth ( low sodium)
2 tsp.dijon mustard
*You may substitute leg quarters for the breasts if you wish.
Directions:
*Heat the olive oil in a nonstick skillet over medium heat.
*Add onion,saute until tender.
*Add garlic ,continue cooking for 1 minute more.
*Turn heat up to medium high heat add the turmeric ,salt and pepper to taste.
*Add the chicken to the skillet cook until golden brown on both sides.
*Quickly add the chicken broth,stir with a wooden spoon to release the caramelized juices that might have stuck to the pan.
*Cook until the broth has reduced,stir in the mustard.
